Homemade Chicken Noodle Soup

It’s officially fall which means soup season! We had a rainy fall day here today, so to kick off the season I made a homemade chicken noodle soup, and wanted to share the recipe with you because it was so easy! So let’s get right to it!

Homemade Chicken Noodle Soup


Ingredients:

1 tbsp Butter

1 tbsp Olive oil

2 stalks of Celery (chopped)

2 medium Carrots (chopped)

1/2 Yellow onion (diced)

3 cloves Minced garlic

1/4 cup Flour

1 tsp Salt

1 tsp Pepper

1 tsp Paprika

1 tsp Thyme

4 cups Chicken broth

2 cups Water

3 cups Egg noodles

1 Cooked chicken breast

1/4 Heavy cream

Fresh parsley (chopped)


Directions:

  1. Heat butter and oil in a large pot over medium heat. Add celery, carrots, and onions and sauté until tender.

  2. Add flour, salt, pepper, thyme, and paprika to coat veggies. Add broth and water and bring to a boil over high heat.

  3. Add noodles and reduce to a simmer over medium high heat. Cook for 15 min. Add the cooked chicken and heavy cream and cook for another 5 min.

  4. Top with fresh parsley, serve, and enjoy!
