My favorite dinners.

Now I have never considered myself to be a good cook, or even know what I’m doing ever. But I am a determined person so I can figure it out, and thankfully my husband is not a picky eater and he could eat the same thing for dinner every day. He even told me that so I know I’m not just making it up! I’m a sucker for easy one dish meals, so a majority of what I cook can be made in one dish and it’s the best! Less clean up, and less work for me!

Because I know I can’t be the only one who hates cooking and isn’t very good at, but still needs to cook for their family, I thought I would share a couple of my favorite go to meals with you! I’ve got a couple super easy, and yummy meals for two that I make pretty regularly. Disclaimer* I’m horrible at measuring anything and knowing how long to cook things for so these are just my best guesses. Here goes nothing!

Chicken fajitas.

This is one of my favorites to make because it’s so yummy and so easy! When cooking for two I use about 3 bell peppers and cut them into slices, about 2 7oz chicken breasts cut into slices fajita style, a quarter of an onion cut up, and 1 clove of garlic. Once everything is cut up I lay it out on a baking sheet and pour about a tbsp of olive oil and then cover it with fajita seasoning. Once you mix everything together I throw it in the oven at 425 degrees and bake is for 20 min. and you’ve got the easiest, yummiest chicken fajitas ever! I always serve it with flour tortillas, sour cream, and salsa. So good and so easy!

Chicken, carrots, and potatoes.

Another easy go to that I make ALL the time! When cooking for two I use about medium sized potatoes, 2 large carrots, a quarter of an onion, and 2 7oz chicken breasts. I cut everything up into bite size pieces, mix the carrots, potatoes, and onions in with a tbsp of olive oil and salt and pepper then spread it out on a baking sheet. I then add the chicken to it and add more salt, pepper, and rosemary, and bake it all at about 450 degrees for about 25 mins. Again, a super easy and yummy dinner! I still have a very limited spice cabinet, so I don’t stray far from salt and pepper which is so sad! But if you have any suggestions for this one please let me know! I’m always down to try something new!

Turkey tacos.

This meal is so yummy and I love it! I’m not sure how much meat I use, but I usually use one package of ground turkey meat and cook that on the stove top and then use taco seasoning to season it. I also heat up a can of black beans on the stove top to go with it. I serve it all on flour tortillas with toppings like cheese, sour cream, and salsa. So easy and so yummy!

Spaghetti.

Now I think this meal is everyone’s last minute dinner go to and it is so easy! I make it pretty often so I just thought I would add it to the list. I always just use regular spaghetti noodles, a can of marinara sauce, and I also add turkey meat to it for a little protein. It is super easy and you can always pair it with a salad, or bread. Easy and yummy! Who doesn’t love spaghetti?!

Sweet and tangy chicken with rice.

Okay this recipe I love because I get to use my instant pot! I make my rice in the instant pot and it is so easy because it takes like 20 minutes max. instead of way longer in a rice cooker! So first I make the rice, then I cook the chicken on the stove top seasoned with salt and pepper. You don’t want to add too much to this one and take away the flavor from the sauce. The sauce we use with this is a panda express sweet and tangy sauce and it is so freaking yummy I love it so much! This is also a quick easy meal that I love. You can also pair it with green beans if you want some veggies with it, and I always cook them on the stove top in butter, with garlic and salt and maybe some lemon juice on top. So good!
